The island's walkable history is in the north, so that is where the guided walks are. La Laguna's UNESCO grid repays a guide more than most places, because the point of it is the plan itself and the way it was copied across Spanish America, which is invisible if nobody tells you.
La Orotava adds the merchant houses and their courtyards, several of which are only open on a tour. Santa Cruz does a mix of architecture and the market, and food walks work the capital's produce hall and the tapas streets around it. Most run in the morning, in several languages, and last two to three hours on flat or gently sloping ground.
