Tenerife Cocktail bars

Cocktails on Tenerife have improved sharply over the last decade and split into two kinds of room. The visitor version is about the setting: rooftops and marina terraces along the south coast, sunset facing west over the water, and a list built for that.

The other version is in Santa Cruz, where a small number of bars work seriously with local material. Canarian rum, honey rum, palm syrup from the neighbouring island, local bananas and the island's own herbs turn up in place of the standard imports, and the results are worth the drive. Expect the capital's bars to fill late, well after the resorts have started to thin out.
