The Canary Islands use the euro, so this only matters if you arrive with another currency, which a large share of the island's visitors do. Two things are worth knowing before you change anything.

The first is that the airport rate is reliably the worst on the island, so change the minimum you need there and the rest in town. The second is dynamic currency conversion: when a card machine or a cash machine offers to bill you in your own currency, decline it and pay in euros, because the exchange rate applied is the machine owner's rather than your bank's. Exchange offices cluster on the southern resort strips and in Santa Cruz, and the posted rate is the one to compare.
