Apartments are the island's default for anything longer than a short break, and the stock is very large. The southern resorts were built in the apartment-complex era, so a one or two bedroom flat with a shared pool a few minutes from the beach is the standard offer rather than a step down from a hotel.

The north and Santa Cruz are cheaper again and more residential. What an apartment buys you here is a kitchen, which matters because the supermarkets are good and eating out three times a day gets expensive. Check the floor and whether there is a lift in older blocks, and confirm how the keys are handed over before you fly.
